This dish will surprise you with its unique flavor, however you can add or change whatever ingredients you like to make this dish your own recipe. It is a great dish to make when you are looking to try something new and do not know exactly what you like. The ingredients used for this dish are:
- 6 ounces of paneer, either homemade or purchased, served cold
- 1 jar of FoieGood duck spreadable
- 1 red bell pepper, thinly sliced into 1/3″ strips
- 1 small Persian cucumber, divided into 1/3″ strips
- 1 ripe mango, sliced into 1/3″ strips.
- a few leaves of mint
- a few leaves of lettuce
- 6 rice paper wrappers, either round or square
Instructions
- Slice the paneer block into 1-inch-wide strips (each strip should measure about 4″ wide by 1″ long).
- Pour 3 tbsp of oil in a medium cast iron or pan over medium heat. Paneer should be added after the pan is heated and cooked for approximately a minute on each side, or until golden brown.
- With the use of a slotted spoon, remove from the oil and allow the food cool to room temperature on a cooling rack or paper towels to facilitate draining. Cut into 1/3″ x 4″ pieces once it has cooled.
- To prep the summer rolls, add about 1/2″ of warm water to a pan big enough to fit the wrappers. Get a separate plate or cutting board so you may roll the wrappers on that surface.
- After each summer roll has been dipped in the water for around 5 seconds to soften, place each one on the plate or cutting board, smoothing out any wrinkles in the wrapper.
- Lay three to four pieces of paneer on the wrapper, labelling the bottom as the portion closest to you. Next, put the duck spreadable, red pepper, cucumber, mango, lettuce, and mint leaves.
- Take hold of the bottom of the wrapper with your fingers, fold the filling over firmly, and then roll the summer roll up until it is entirely contained.
- Continue using the remaining wrappers until all the filling are used. Enjoy!
