These highly nutritious and absolutely delicious bite-sized balls are so simple to make and are just what you need to power through the day! They’re the perfect snack, providing a burst of energy with a healthy dose of fat, fiber and carbohydrates. If you have a sweet tooth, they’ll also satisfy your cravings and regulate blood sugar levels in between meals.
You can also change the recipe to accommodate your preferred nut. Personally I love walnuts because they’re high in omega-3 fatty acids, vitamin E, and vitamin B. They’re also an easy, healthy snack for children, and my 2-year-old daughter Ava absolutely loves them!

Ingredients
Makes approximately 15 tablespoon-size balls
- 1 cup oat flour (made from by processing rolled oats in a food processor)
- 1 1/2 cups finely grated carrot
- 1/2 cup Medjool dates, pitted
- ½ cup finely chopped apricots
- 1 cup walnuts (or you can use any type of nut that you like)
- 1 tsp. vanilla
- 1 Tbsp. honey
- ¼ cup organic sesame seeds
Directions
Put all ingredients in a food processor except the sesame seeds. Blend well until mixture achieves a doughy consistency.
Roll into bite-size balls, then dress each ball with sesame seeds.
Freeze for a couple of hours. You can keep these bliss balls in the fridge or freezer.
These bliss balls can be kept in the fridge for about a week, or you can freeze and just take out to eat as needed. Personally, I like to leave mine in the freezer, as it gives them a more chewy bite.
