1. Sweet potato

Sweet potatoes are a great source of fibre, which is essential for keeping you regular. Sweet potatoes contain more fibre than white potatoes, which make them the perfect alternative choice. If your family won’t eat mashed sweet potatoes, you can try a mixture of white and sweet potatoes and ease them into getting used to sweet potato. They contain vitamin A. Vitamin A is a much-needed vitamin for the eyes, specifically the retinas, and also assists in bone health.

2. Beets

Beets are low in calories and contain a good amount of fibre. Beets contain folate, which is crucial in preventing neural tube defects in foetuses. Beet root is also rich in B-vitamins: iron, copper and potassium. Potassium helps to lower the heart rate and regulate the metabolism. Beets can be eaten raw, baked, or even juiced.

3. Green beans

Green beans contain many nutrients that benefit the body including manganese, thiamine, copper, riboflavin, and vitamins A, C, and K. One cup of green beans contains over 100% of the daily requirement of vitamin K. Vitamin K is important for blood coagulation and to maintain proper bone density. Green beans make a wonderful addition to stir fries and even soup or just as a side dish.

4. Garlic

Garlic is a healthy way to add flavour to many meals. Garlic has be touted for lowering cholesterol and as being very heart-healthy. Garlic also contains anti-oxidants, potassium, zinc, selenium, and iron. Iron is important for transporting oxygen to all parts of the body. Iron is also essential for immune activity and protection against free radicals.
